Lioness Fruit Pizza Cookies (by Femme Royale's OG Lioness)

Lioness Fruit Pizza Cookie 

 

Gilly Anne Smith, founder of the Lioness Academy and the Femme Royale movement, crafted this badass dessert fit for all. Gilly's passion is to provide women with inspiration, fitness, recipes, and the motivation we all need to be our best version of ourselves. Luckily for us, she uses Virgin Islands Sea Salt in many of her recipes including the fruit pizza cookie.

 

INGREDIENTS:

SUGAR COOKIE CRUST

Protein

2 Eggs

Carb

1 cup Granulated Sugar

2 1/2 cup Paleo Flour (Bob’s Red Mill) 

1/3 Flax Meal — good source of fiber

Fat

3/4 cup Butter - soften

2 tbsp Coconut Oil

Spice

1/2 tsp Virgin Islands Sea Salt

1 tsp Baking Soda

1 tsp Vanilla Extract (use the real stuff not imitation)


DIRECTIONS:

Bake at 350 degrees

Preheat oven to 350 degrees and line a baking sheet with parchment paper (or coat with baking spray).

In a large bowl with a standing mixer or hand mixer, cream the butter and sugar together until light and fluffy, about 1 minute.

Add in the egg, vanilla extract, and almond extract; beat until combined.

Add in flour, baking soda, baking powder, and salt. Mix until just combined, making sure to scrape down the sides of the bowl every now and again.

Roll dough into 1" balls, and roll in sugar.

Place on baking sheet, about 2" apart. Bake for 10-11 minutes, or until cookies have set.

Allow the mixture to cool.




CREAM FROSTING:

Carb

2 tbsp Orange Juice — fresh

1/4 cup Brown Sugar

Orange Zest

Fat

1 package Cream Cheese - soften

Spice

1 tsp Vanilla Extract




DIRECTIONS:

Mix all ingredients in small bowl, until creamy.

Mango
